Ex-WTC workers to open Colors restaurant next week

Colors, the restaurant operated by many surviving members of the World Trade Center's Windows on the World staff, is finally set to open next week, according to the New York Times.

The restaurant will serve "American fare with a global twist," -- part of the twist coming from the concept that each employee, many of them immigrants, has supplied a family recipie to the chefs.

Run as a workers cooperative, Colors plans to treat its employees better than the average restaurant, paying overtime, vacation and ultimately even pensions. Even the dishwashers will make at least $13.50 an hour.

The first dinner is scheduled for Tuesday.

Colors is located at 417 Lafayette St., map.

Update: Crain's reports that Colors will not open until Thursday.
